Devil's Food Cupcake

An exercise before doing the big 'project' next Saturday.



Recipe:
(copied directly from Chockylit)

2 cups flour
2 cups sugar
1/2 cup unsweetened cocoa powder
1-1/2 teaspoons baking soda
1-1/2 cups milk
1/2 cup butter
2 teaspoons vanilla
2 eggs

Methods:

Preheat oven to 350 degrees.

1. Measure out everything but the eggs directly into your mixer bowl.
2. Mix on low speed just until incorporated.
3. Beat on high speed for 2 minutes.
4. Add eggs, beat on high speed again for 2 minutes.

Measure out into cupcake pan lined with cupcake papers. A 2″ ice cream scoop works great for this. Bake for about 15-20 minutes until a toothpick comes out clean. Let cool slightly in the pan then transfer to a rack to cool completely before frosting.

Tahu Tek

Makanan ini enaaaakk sekali!

Rasanya kalo masak 1 porsi masih kuraaaangg aja :D

Pertama kali belajar masak ini pas ke rumahnya Tante Betty. Pas Tante Betty bikin, diriku ngintip2 sekalian inget2 apa aja bahannya. Besokannya, krn kurang puas makan pas di Tante Betty, berniat bikin lagi deh di rumah. Haha. Eh, ternyata diriku yg imut ini (dan mempesona), bisa juga buatnya! Seneng seneng!



Resep (kira2 aja ya, kalo aku masak ini juga modalnya kira2 hihi):

- 1 bungkus tahu putih (aku tadi sempet ngecek, beratnya 500 gr), potong kira2 2 cm kali 2 cm, terus digoreng sampe coklat
- 1 bungkus lontong, direbus 2 jam sampe jadi, terus dipotong kecil2
- Tauge, banyaknya sesukanya, direbus sesukanya juga (aku sukanya sampe yg lembek)

Bahan sauce:
Petis udang
Peanut butter
Kecap manis
8-10 siung bawang putih, dikupas kulitnya, terus digoreng sebentar
Cabe, banyaknya sesukanya, digoreng juga sebentar
Air panas, sedikit

Bahan lain:
Kerupuk
Bawang goreng

Cara buat sauce:
1. Ulek bersama2 semua bahan sampe rasanya pas. Kalo terlalu kental, bisa ditambah air. Kalo terlalu encer, bisa ditambah kombinasi petis+peanut butter+kecap manis. Suka2 aja deh pokoknya :D

Cara menyajikan:
Gunting tahu kecil2 (biar serasa di abang2 gitu hihi).

Taruh di piring: tahu, lontong, tauge terus di atasnya dituang sauce.

Diriku kalo makan tahu tek ini paling suka kalo krupuknya diremet2in kecil2 terus semua bahan dicampur sampe tercampur rata.

Garlic Chilli Prawns

This is YUMMIE! Superb! This can even beat restaurants' foods :P

I bought the prawns at Oriental, with the original intention to make Udang Goreng Mayonaise (aka Prawns in Mayo Sauce). However, just at the time before making Udang Goreng Mayonaise, I realized that I ran out of mayo :P. Therefore, being smart, I decided to look for another recipe using prawns, and I found this recipe in my cookbook "Homestyle Chinese Cooking" by Periplus.



Recipe:
(taken from Homestyle Chinese Cooking by Periplus)

500 g (1 lb) fresh green prawns or tiger prawns, shelled and deveined
5 red chilli peppers, fresh or dried
60 ml (1/4 cup) vegetable oil
8 cloves garlic, smashed with the side of cleaver and skinned
6 slices ginger, finely cut into shreds
3 tablespoons chilli sauce (preferably garlic chilli sauce)
6 spring onions, cut into 2.5 cm (1 in) sections

Marinade:
2 tablespoons wine
1 teaspoon sesame oil
1 teaspoon sugar
1/2 teaspoon cornstarch mixed with 1 tablespoon water

Sauce:
1 tablespoon wine
1 teaspoon soy sauce
1 tablespoon tomato sauce (ketchup) (optional)
1 teaspoon salt

Directions:
1. Mix the Marinade in a bowl, then add the prawns and toss with a spoon to blend. Leave aside to marinate for 20 minutes.
2. Combine all Sauce ingredients and set aside.
3. Cut chillies lengthwise and scrape away the seeds and fibres.
4. Heat the oil in a wok and, when hot, add the chillies and let them scorch.
5. Add the garlic, ginger and prawns together and stir-fry quickly for 1 to 2 minutes, until prawns turn pink and flesh becomes firm.
6. Add the chilli sauce and stir to blend, then add the spring onions and the Sauce mixture, and continue to cook for another 1 to 2 minutes. Transfer to a platter and serve.

Serve 4
Preparation time: 20 mins
Cooking time: 5 mins

Note:
1. I skipped the spring onions since I didn't have it :D

Martabak Manis

Hi, I'm back :p, with new trial of Martabak Manis. Yohoo!


Martabak Manis is one of Okki's favorite foods. And since he just came back from Indonesia (and I know that he's very homesick right now), I tried to make something to cheer him up. And so, I decided to make this Martabak Manis for him.

Warm molten-centred chocolate cupcakes



Recipe:
(taken from book "Everyday Muffins & Bakes)

4 tbsp soft margarine
55 gr/2 oz caster sugar
1 large egg
85 gr/3 oz self-raising flour
1 tbsp cocoa powder
55 gr/2 oz plain chocolate
icing sugar, for dusting

Methods:
1. Put 8 paper baking cases in a muffin pan, or place 8 double-layer paper cases on a baking sheet.
2. Put the margarine, sugar, egg, flour and cocoa in a large bowl and, using an electric hand whisk, beat together until just smooth.
3. Spoon half of the mixture into the paper cases. Using a teaspoon, make an indentation in the centre of each cake. Break the chocolate evenly into 8 squares and place a piece in each indentation, then spoon the remaining cake mixture on top.
4. Bake the cupcakes in a preheated oven, 190C/375F, for 20 minutes or until well risen and springy to touch. Leave the cupcakes for 2-3 minutes before serving warm, dusted with sifted icing sugar.
